1976年、フランス・リヨン出身。
フランスの優秀な職人に贈られるM.O.F.(Meilleur Ouvrier de France)を獲得したシェフの店で修業を積み、パリの有名店でシェフ・パティシエを務めた後、2000年にリヨンに戻り、父の後を継ぎ、パティスリー「ブイエ」のオーナーパティシエに就任。 2007年、伊勢丹新宿本店にブティック「セバスチャン・ブイエ」を出店。

Monsieur Sébastien Bouillet is a chocolatier-patisserie chef, based on Lyon, France. After having trained with some of the Meilleurs Ouvriers de France (an award for extraordinary craftsmen), he succeeded his father’s pâtisserie “Bouillet” in 2000.
He opened his boutique at Isetan Shinjuku in 2007.
His passion is to reinterpret traditional desserts. His work comes from his own instincts also inspiration from Japanese market and customers.
His new seasonal limited edition chocolate“Jewel chocolat“inspired by beautiful colored gem stones. This chocolat has even facets like real gem stones.
Monsieur Bouillet says “You can enjoy beautiful colors with your eyes and each different flavor & taste with your tongue”.
